Sweet Roasted Sweet Potatoes

I love making these roasted sweet potatoes for a quick side for dinner. They come together quickly, taste delicious and reheat well the next day. You can also add minced garlic or additional herbs such as rosemary or sage.

Prep Time: 10 Minutes | Cook Time: 30 Minutes


  • 2 pounds sweet potatoes, peeled and chopped

  • 1 tablespoon EVOO

  • 2 tablespoons melted butter

  • 1 lemon juice and zest

  • 1/3 cup honey (or maple syrup)


  1. Preheat oven to 425

  2. Peel and cut sweet potatoes

  3. Add to a large bowl and season with salt

  4. Add butter and olive oil to a small saucepan. Simmer over medium heat until the butter has melted.  Add our lemon juice, lemon zest and honey.  Let simmer for one minute on low heat.

  5. Pour your honey-lemon butter over the sweet potatoes.  Toss.

  6. Transfer sweet potatoes onto a baking sheet and roast for 25 minutes (or until done)
