Skillet Chicken "Nuggets"

Our family loves these easy skillet chicken "nuggets". I like to make them early in the week and we can eat throughout the week as is or added to salad or quesadillas!


Prep Time: 5 minutes | Cook Time 15 Minutes



Ingredients

  • 1lb boneless chicken breasts, cut into 1 inch pieces

  • 1tsp Italian seasoning (or your own mix of oregano, rosemary, basil and thyme)

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • 3/4 tsp sea salt

  • 1/4 tsp black pepper

  • 2 tbsp avocado oil (or olive oil)

  • 2 tbsp unsalted butter

  • 2 tbsp fresh parsley


Directions

  1. Pat your chicken dry with paper towels and cut into pieces

  2. Place chicken pieces in a large bowl and season with Italian seasoning, garlic powder, onion powder, salt and pepper. Mix well to coat.

  3. Heat oil in a large cast iron skillet over medium-high heat

  4. Once heated, reduce heat to medium and add your chicken pieces in a single layer.

  5. Cook chicken bites for 5-8 minutes total, flipped to different sides every couple of minutes until golden brown on all sides. Do not cook all the way through yet.

  6. Reduce your heat to low and add your butter pieces to the pan, mixing and coating the chicken for an additional 2-3 minutes

  7. Garnish with parsley and serve (optional)
