Salmon Patties

I originally started playing around with this recipe when Carter started solid foods. You can substitute different herbs into this and you can also add spinach or bell peppers to get more vegetables in them.

Prep Time: 15 Minutes | Cook Time: 20 Minutes


  • 14.5 ounce can wild salmon, drained (can also substitute tuna)

  • 2 eggs

  • ¼ cup cornmeal

  • 2 tbsp chopped green onions

  • 2 tsp chopped fresh dill

  • ½ cup shredded mozzarella (or cheddar)

  • 3 tablespoons parmesan cheese

  • ¼ cup panko breadcrumbs


  1. Preheat oven to 375. Line baking sheet with parchment paper

  2. Add all ingredients except the panko breadcrumbs to a bowl.  Work into a uniform batter

  3. Spread the breadcrumbs on a plate

  4. Using ¼ cup of the batter at a time, form into patties.  Press both sides into the breadcrumbs and place on baking sheet

  5. Bake for 18-20 minutes, or until lightly golden brown
