Pesto Chicken

This pesto chicken is super quick and easy to throw together for an easy week night dinner. We have several pesto recipes on the website that you can use for the pesto called for. This chicken comes out grilled perfectly and still juicy.


Prep Time: 5 Minutes | Cook time: 20 Minutes



Ingredients

  • 4 boneless local chicken breast

  • 2 tbsp of avocado oil

  • ½ cup pesto plus ¼ cup extra for serving (pesto of choice, or check out our pesto recipes!)

  • ¼ teaspoon salt optional - adjust to your tastes

  • ¼ teaspoon pepper

  • Pint or quart of cherry tomatoes (optional)


Directions

  1. Depending on the chicken breast thickness, I butterfly my chicken breast first

  2. Season chicken with salt and pepper to your taste and smother your chicken filets in pesto on all sides

  3. Preheat a skillet over medium high heat with oil

  4. Once heated, add your chicken breasts and cook for 5-6 minutes on each side or until completely cooked through (165 inside temperature)

  5. Transfer your chicken to a warm plate

  6. In your same pan, add your tomatoes and sprinkle with salt to taste, rotating once until soft and beginning to brown

  7. Top the chicken with extra pesto if desired and serve with the tomatoes
