Pasta Salad with Veggies

My favorite way to consume cucumbers is in a pasta salad. Throughout the summer, I always have a version of this pasta salad in our refrigerator. I pull it out for snacks and most lunches. I also like that I can optionally add different vegetables I may have on hand. I took this version to book club recently and it was a hit.

Ingredients

  • 1 lb pasta shells, your choice

  • 1 1/2 cups cucumbers, diced or chunky

  • 1/2 cup onion, diced or sliced (this can be red, yellow or white)

  • 1 tomato, chunky (optional)

  • Peas, drained (optional)

  • Chicken, bacon or ham (optional if you want some extra protein)

  • 1 cup mayonnaise

  • 1 tsp sugar

  • 2 tbsp fresh dill

  • 2 tbsp white vinegar

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp garlic powder

  • Feta or goat cheese (optional)


Directions

  1. Cook pasta to package instructions

  2. Drain your pasta

  3. Combine your pasta, vegetables and additional ingredients and stir

  4. I like to refrigerate mine at least one hour before serving
