This is a no fuss quick recipe for using your zucchini or squash.
Prep Time: 5 Minutes | Cook Time: 18 Minutes
Ingredients
1 pound summer squash (about 2 medium)
1 tbsp olive oil
2 tbsp parmesan cheese
1 tbsp bread crumbs
1 tsp lemon pepper seasoning
½ tsp paprika
½ tsp salt
Directions
Preheat oven to 400
Cut squash into ½ inch slices and toss with olive oil
Combine remaining ingredients in a bowl and toss with squash
Place squash on a baking pan and roast 12-14 minutes or until squash in tender
Broil 1-2 minutes, or until crumbs are lightly browned
