Parmesan Roasted Summer Squash

This is a no fuss quick recipe for using your zucchini or squash.


Prep Time: 5 Minutes | Cook Time: 18 Minutes



Ingredients

  • 1 pound summer squash (about 2 medium)

  • 1 tbsp olive oil

  • 2 tbsp parmesan cheese

  • 1 tbsp bread crumbs

  • 1 tsp lemon pepper seasoning

  • ½ tsp paprika

  • ½ tsp salt

Directions

  1. Preheat oven to 400

  2. Cut squash into ½ inch slices and toss with olive oil

  3. Combine remaining ingredients in a bowl and toss with squash

  4. Place squash on a baking pan and roast 12-14 minutes or until squash in tender

  5. Broil 1-2 minutes, or until crumbs are lightly browned
