Parmesan Arborio (or white rice)

Even though this recipe only has garlic and green onions from garden, I include it here, because rice makes such a great bed for vegetables! It can be prepared and cooking to the side while you're making the rest of your meal.

Prep Time: 5 Minutes | Cook Time: 20 Minutes

  • 4 tbsp butter

  • 1 tbsp minced garlic

  • 1 cup arborio (or white rice, risotto or orzo)

  • 1 cup water

  • 1 cup milk

  • ½ tsp salt

  • ½ cup parmesan cheese

  • ½ cup chopped green onions (optional for topping)

  1. Melt butter in a medium sauce pan over medium heat

  2. Add garlic and cook until translucent

  3. Stir in your rice and let cook for about a minute

  4. Add water, milk and salt.  Stir and bring to a boil

  5. Cover and reduce heat to low for 20 minutes or until rice is tender.  Stirring occasionally.

  6. Remove from heat and stir in your cheese, and let melt for a few minutes, top with green onion (optional)
