Oven Dried Cherry Tomatoes

We typically have an abundance of cherry tomatoes in the middle of the summer and I ran across a friend who dehydrated her cherry tomatoes. This was so easy and can be done in a bunch of different ways. These make great snacks, added to pizza, or in salads. You can even "rehydrate" your tomatoes and make a tasty spread for sandwiches and wraps.


Prep Time: 15 minutes | Cook Time: 5 hours


Ingredients

  • 2 pints cherry tomatoes (or what you have on hand)

  • Salt

  • Extra Virgin Olive Oil (optional)

  • Herb of choice, optional (Thyme, Rosemary, Oregano)


Directions

  1. Preheat your oven to 200 and line a baking sheet with parchment paper

  2. Cut your cherry tomatoes in half and place in a bowl

  3. Add your salt, oil and herbs (if using) and mix. I don't have measurements for these, but just kind of taste as I add.

  4. Place your tomatoes cut side up on the baking sheet, they can be touching and packed in there on the sheet

  5. Bake for 4.5 to 5 hours, the ideal is a dry tomato with a soft-leathery texture

  6. Store in a jar in the refrigerator
