One Pan Salmon and Veggies

I love this recipe for how the small amount of dishes, the quick cook time, and the variety of vegetables you can use. If you're looking for a quick and easy work night meal, this is the one. We get our salmon from Azure Standard, the salmon is wild caught out of Alaska.


Prep Time: 15 Minutes | Cook Time: 20 Minutes



Ingredients

  • ½ cup of EVOO

  • 2 tbsp capers

  • 2 tsp Dijon mustard

  • 2 tsp fresh dill, chopped (or dried)

  • 2 cloves of garlic, minced (or 1 tsp garlic powder)

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • Vegetables – choose 2-4 vegetables of your choosing

    • Bell peppers, cut into chunks

    • Carrots, cut into chunks

    • Potatoes, cut into chunks

    • Onion, cut into chunks

    • Radishes, cut into chunks

    • Broccoli florets

    • Zucchini or squash

    • Cherry Tomatoes


Directions

  1. Preheat oven to 425 and line a baking sheet with parchment paper

  2. Season your salmon with salt and pepper

  3. Season your chopped veggies with salt

  4. Mix your marinade ingredients into a small bowl

  5. Arrange the salmon and veggies on the baking sheet

  6. Brush the fillets with some of the dressing

  7. Brush the vegetables with half of the marinade and toss

  8. Roast for 20 minutes, or until salmon is cooked through and vegetables start to tender

  9. Drizzle the rest of your marinade over the salmon and veggies and serve
