Mediterranean Salad

This is another cucumber and tomato salad I keep on hand throughout the summer, it's also sometimes referred to as a "summer salad". This is quick and stays fresh in the refrigerator.

Ingredients

  • 2 large cucumbers, diced or sliced

  • 3 medium tomatoes, chunks (or cherry tomatoes halved)

  • 1 small onion, chopped

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh basil or mint, chopped

  • Dressing

    • 1 lemon, juiced

    • 3 tbsp olive oil

    • Salt and pepper to taste

    • 1 tsp dried oregano (optional)


Directions

  1. Prepare your veggies and herbs

  2. Mix your "dressing"

  3. In a bowl combine your veggies, herbs and mix with dressing

  4. I also will serve mine with feta, goat cheese or mozzarella cheese as a topping
