Meatloaf with Veggies

I originally started making this as a meal for Carter when he started eating solid foods, but it soon became a family favorite for everyone for dinner. I love that it's got a lot of veggies and that I can use whatever is in season. I often double the recipe and freeze half for reheating later.

Prep Time: 10 Minutes | Cook Time: 1 hour


  • 1lb of ground beef or ground turkey

  • ½ to 1 cup of veggies of choice (diced spinach, carrots, onion, bell pepper)

  • 1 large egg

  • ½ cup of breadcrumbs

  • ½ cup of milk

  • ½ tsp of ground black pepper

  • ¼ tsp of garlic powder


  1. Lightly grease a pan, around a 9x5 and preheat oven to 350

  2. Combine all of the ingredients in a bowl (I find using my hand is the easiest)

  3. Transfer the formed “loaf” to your pan and cook in the oven until pink is no longer present, about 1 hour
