This recipe makes a large amount so you could easily half it and still have more than enough for two or three people. You could also add some rosemary or thyme to this recipe to give it more flavor.

Ingredients
5 lbs potatoes, peels removed
1 salted stick of butter
1/2 cup of milk
1/4 of 8 oz package of cream cheese, softened
1/4 to 1/2 a package of sour cream
Tsp Salt
Tsp Pepper
Chives or green onions (optional)
Directions
Peel potatoes, cut into cubes
Bring a large pot of water, generously salted, to boil. Boil potatoes for 20 minutes, or until soft
Drain potatoes
Melt stick of butter and 1/2 cup of milk in small sauce pan
Pour potatoes into mixer, add cream cheese and sour cream.
When butter and milk are melted, pour into mixer with potatoes
Add tsp of salt and tsp pepper, or to taste
Top with your chives or green onions for serving
