Lightly Fried Squash with Garlic Basil Sour Cream

Try this quick lightly fried squash recipe with a side dip that can be used for multiple purposes. Use the dip with squash, but it also goes great with cucumbers, cherry tomatoes, carrots, and sweet peppers!


Prep Time: 10 Minutes | Cook Time: 10 Minutes


Ingredients

  • 1-2 squash, sliced 1/2 inch thick (Patty Pan squash or zucchini works great for this recipe too)

  • salt and pepper to taste

  • 1/4 cup flour or more, if needed

  • 1/2 cup sour cream

  • 2 cloves of garlic, minced

  • 2 green onions, chopped

  • 1 handful of basil, chopped

  • 2-3 tablespoons of vegetable oil

Directions

  1. Lightly salt and pepper each piece of squash and dredge on both sides in the flour

  2. Heat oil over medium heat in pan and cook squash in single layer for a few minutes on each side until lightly browned.

  3. In a small bowl combine sour cream, garlic, basil and green onion, mix.  I go ahead and prepare this and have in the refrigerator for serving.

  4. Serve squash topped with sour cream mixture
