Egg Roll Cabbage Soup

This recipe is one from my mom's kitchen. She's always made egg rolls and when she made this, I told her it tasted like deconstructed egg roll! There are also so many different ways you can change this recipe to add more vegetables that you have on hand.


Prep Time: 15 Minutes | Cook Time: 1.5 hours



Ingredients

  • 2-3 lbs ground beef, pork or chicken

  • 2 medium onions, chopped

  • 2 tbsp butter

  • 1 large cabbage, shredded and chopped

  • 1 bunch of celery, chopped

  • 2 large carrots, chopped or shredded

  • 30oz stewed tomatoes

  • 2 pouches of onion soup mix (any flavor)

  • 1/4 cup soy sauce

  • 1tbs chicken granules

  • Salt, pepper to taste

  • Fresh herbs, optional (thyme or oregano)

  • Added water


Directions

  1. Place hamburger in large stock pot or dutch oven to fry

  2. Add about a cup of warm water to break it up, fry out and remove grease

  3. Add onions to meat and saute until soft

  4. I another skillet add butter and sautee your cabbage, celery, and carrots

  5. Add the sauteed vegetables and remaining ingredients to your meat mixutre

  6. Add water until mixture is almost covered

  7. Season with salt and pepper

  8. Simmer for about an hour
