Broccoli, Ham and Egg Mini Muffins

I originally started using this recipe as a breakfast for Carter when he was a baby and then have modified as he's gotten older to add salt and chopped onions. You could also substitute in other vegetables like peppers and mushrooms! This recipe makes 12 mini muffins.

Prep Time: 5 Minutes | Cook Time: 25 Minutes


  • 1 Cup very finely chopped cooked broccoli

  • 1 Slice ham, very finely chopped (about ¼ cup)

  • 1/4 Cup chopped onions (optional)

  • 4 eggs

  • Freshly ground black pepper, pinch of salt


  1. Preheat the oven to 350.  Spray mini muffin cups with nonstick cooking spray.

  2. Stir together the broccoli, onion and ham.  Divide evenly among the cups.

  3. In a medium measuring cup, whisk together the eggs and salt and pepper to taste.

  4. Pour the eggs over the broccoli mixture in the cups, dividing evenly.

  5. Bake for 14-25 minutes, or until set.  Coll muffins in cups for 10 minutes.  Transfer to wire rack to cool.
