Baked Tomatoes

Toward the end of summer I'm always looking for fresh ways to use the amount of tomatoes coming through my house. These baked tomatoes are so easy and full of flavor!


Prep time: 5 Minutes | Cook time: 20 Minutes



Ingredients

  • 2 tbsp avocado oil or EVOO

  • 1 tbsp balsamic vinegar

  • 1 tbsp parsley

  • 1/2 tsp Italian seasoning

  • 1 tbsp fresh basil, chopped

  • 1/2 tsp sea salt

  • 4-5 Large tomatoes, halved widthwise


Directions

  1. Preheat oven to 450 (you can line a baking sheet with parchment paper)

  2. In a large bowl whisk together your oil, vinegar, parsley, Italian seasoning, salt and pepper.

  3. Gently dunk each tomato half in the mixture and place on baking sheet. I'll also pour a little extra liquid on top.

  4. Sprinkle with basil

  5. Bake until soft and caramelized, 15 to 20 minutes
