Fritters make a wonderful side and a way to change up using your vegetables other than just roasting them. You could also replace the zucchini with squash or broccoli (just finely chop your broccoli in a food processor).
Prep Time: 20 Minutes (to include shredding and draining zucchini) | Cook Time: 10 Minutes
Ingredients
2 Cups shredded zucchini (about 1 medium size zucchini)
1 egg beaten
1/3 cup flour
½ tsp onion powder
¼ cup shredded cheddar cheese
¼ tsp salt
Freshly ground pepper
1 tbsp thinly sliced green onion
1 tbsp olive oil
Directions
Place shredded zucchini in a colander and sprinkle with a bit of salt. Let it sit and drain for about 10 minutes.
Using your hands or a cheese cloth squeeze out as much water from the zucchini as possible.
Mix together all of the ingredients, other than the olive oil, in a medium sized bowl
Heat the olive oil in a pan over medium high heat
Using your hands, pack the zucchini mixture into about 8-10 fritters. Place them in the hot pan about an inch apart.
Cook for about 2-3 minutes per side or until slightly browned and crispy
Serve warm alone, with sour cream, or a dip of your choosing
