Veggie Meatballs

This is another Carter favorite. You can easily substitute the ground beef with ground turkey as well. These freeze well and reheat for future lunches and dinners. You can also add spinach or peppers to this recipe as well.

Prep Time: 10 Minutes | Cook Time: 20 Minutes


  • 1 lb ground beef

  • ½ onion

  • 3 cloves garlic

  • 1 carrot

  • 2 celery stalks

  • 1 potato (sweet or regular)

  • 1/3 tsp rosemary

  • ¼ tsp sea salt (omit for babies under one)

  • Cornstarch


  1. Preheat oven to 400

  2. Place veggies in food processor, blend and finely chop

  3. Add meat and spices and pulse until combined

  4. Add some cornstarch (this helps the ingredients stick together)

  5. Scoop meat and form into balls

  6. Place the meatballs in a mini muffin pan

  7. Back for 20 minutes, until no longer pink
