Turnip "Taters"

An easy way to use turnips and a great substitute for potatoes if you're looking for a lower carb option.


Prep Time: 10 Minutes | Cook Time: 15 Minutes



Ingredients

  • 4 baby turnips

  • 1 tbsp unsalted butter

  • 2 tbsp panko bread crumbs

  • 2 tsp minced mint leaves (or rosemary, sage, etc)

  • ½ tsp grated lemon zest

  • Salt and pepper to taste

Directions

  1. In a large saucepan of bring water to boil, and cook turnips for around 10 minutes.

  2. Once turnips are cool enough to handle, dice or make into wedges

  3. In a large skillet cook turnips in butter over moderate heat, stirring occasionally until almost tender and golden on the edges (about 10 minutes)

  4. Stir in bread crumbs, mint, zest and salt and pepper to taste.

  5. Cook, stirring occasionally, until turnips are tender, about 5 minutes.
