This recipe was shared with us from our friends at Coast to Coast Farm. This recipe can be used with your typical large heads of cabbage or a leafy cabbage like Chinese Cabbage.
Ingredients
1lb cabbage (cut into thick wedges if using heads of cabbage)
2 garlic cloves, smashed and peeled
1/2 a lemon (juiced)
2-3 tbsp unsalted butter, at room temperature
1/2 tsp thyme leaves
Salt and pepper to taste
Directions
Bring 1/2 inch of water to a boil in large sauce pan
Add the cabbage, garlic and tsp of salt
Cover and steam-simmer rapidly
After about a minute, uncover, stir the cabbage so it's getting evenly steamed
Add more water if necessary to keep steaming, cover and cook until the cabbage is mostly tender but is still crunchy, about 4-6 minutes (less if using leafy cabbage)
Drain the cabbage well and chop
Place your cabbage in a separate bowl and season with lemon juice, butter, thyme and pepper to taste
