Steamed Cabbage with Thyme

This recipe was shared with us from our friends at Coast to Coast Farm. This recipe can be used with your typical large heads of cabbage or a leafy cabbage like Chinese Cabbage.



Ingredients

  • 1lb cabbage (cut into thick wedges if using heads of cabbage)

  • 2 garlic cloves, smashed and peeled

  • 1/2 a lemon (juiced)

  • 2-3 tbsp unsalted butter, at room temperature

  • 1/2 tsp thyme leaves

  • Salt and pepper to taste


Directions

  1. Bring 1/2 inch of water to a boil in large sauce pan

  2. Add the cabbage, garlic and tsp of salt

  3. Cover and steam-simmer rapidly

  4. After about a minute, uncover, stir the cabbage so it's getting evenly steamed

  5. Add more water if necessary to keep steaming, cover and cook until the cabbage is mostly tender but is still crunchy, about 4-6 minutes (less if using leafy cabbage)

  6. Drain the cabbage well and chop

  7. Place your cabbage in a separate bowl and season with lemon juice, butter, thyme and pepper to taste
