Sriracha Lime Corn Salad

This is one of my favorite dishes to serve family during the summer. It's so fresh, full of flavor and we munch on it for a whole week!
Prep Time: 15 Minutes | Cook Time: 25 Minutes

Ingredients
2 Tbsp butter
3 cups corn (about 5 ears)
1/2 cup sweet pepper, finely diced (or any pepper you would like, we like to add a jalapeno)
2 green onions, thinly sliced
1 tablespoon sriracha sauce
1 tablespoon lime juice
2 tablespoons mayonnaise (optional)
1/4 cup crumbled goat cheese (feta or queso fresco also works)
Cooked bacon, crumbled (optional)
Directions
Melt the butter in a heavy skillet over medium-high heat
Add corn, toss, and let it sit cooking until charred, mix and let char again
Add the pepper of your choice, sauté for a minute or so and remove pan from heat
Pour corn and pepper into another bowl and mix the rest of the ingredients together
Mix everything and serve warm or at room temperature (this also reheats well)
