Spinach Muffins

These are a kid favorite and you can make green food fun! These freeze well for reheating in the mornings for breakfast.


Prep Time: 5 Minutes | Cook Time: 20 Minutes



Ingredients

  • 1 cup sliced ripe banana

  • 2 cups lightly packed spinach

  • ¾ cup milk

  • ¼ cup honey

  • 2 tbsp melted and cooled butter (or plain yogurt)

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup rolled oats

  • 1 tsp baking soda

  • 1/8 tsp salt

  • 1 cup whole wheat flour

  • Mini chocolate chips (optional)

Directions

  1. Preheat oven to 375 degrees and grease a standard sized muffin tin or a mini muffin tin

  2. Place all ingredients except flour and chocolate chips, into a blender

  3. Blend until very smooth, scrape down the sides as needed.  You want the greens to be very finely blended in the batter.

  4. Pulse the flour in just to combine, or stir it in gently

  5. Pour batter into the prepared muffin tin, filling about ¾ way full,

  6. Sprinkle with chocolate chips if using

  7. Bake for 18-20 minutes until cooked through
