Spinach Egg Muffins

We love a quick and easy breakfast that we can use throughout the week. You can add additional veggies to these, such as, peppers, mushrooms, and onions. You would just saute any vegetables before baking. You can also add any cooked meats to these, such as, bacon, ham or sausage.


Prep Time: 10 Minutes | Cook Time: 25 Minutes




Ingredients

  • 2 cups spinach

  • 6 eggs, lightly beaten

  • 1 cup shredded cheddar or mozzarella cheese

  • ½ cup cornmeal (or all purpose flour)

  • ¼ cup salsa

  • ½ tsp cumin

  • ¼ tsp salt

Directions

  1. Preheat oven to 375 degrees and grease a muffin or mini muffin tin

  2. Roughly cut the spinach (kitchen scissors works great for this)

  3. Add spinach to a medium bowl with the rest of the ingredients and stir well to combine

  4. Divide among the muffin tin (if using a mini muffin tin, it’s about 1 tbsp per cup)

  5. Bake for 14-16 minutes or until the edges are golden brown and the tops are firm

  6. Let muffins cool for 5-10 minutes
