This is a go to meal in our house for a week night. It comes together super quick, keeps the chicken moist, skin crispy and everyone always enjoys it.
Prep Time: 5 Minutes | Cook Time: 30 Minutes
Ingredients
2 ½ pounds chicken leg quarters (or chicken thighs)
1 tsp coarse salt
1 tsp garlic salt
½ tsp pepper
2 tbsp olive oil
1 head of garlic and halved (medium)
2 tbsp butter
Herbs (sprigs of rosemary or thyme work great, optional)
Directions
Pat chicken dry
Heat oven to 425
Mix salt, pepper and garlic salt in a bowl and sprinkle over both sides of quarters
Heat oil in skillet until it crackles when you drip some water in it
Once skillet is hot, put quarters in skin side down and add butter and cook the chicken for 7-9 minutes
Flip over, move your garlic to top your chicken and drop in your herbs
Put skillet in oven for 15-20 minutes until thighs are 165 in the middle
