Simple Radish Salad

If you're looking for a different way to eat radishes or you're not the biggest fan of their bitter bite, this is the recipe! We always have so many radishes and I'm not always in the mood for them raw. I love this simple radish salad and the lemon takes out some of that radish bitter bite. I'll also use the leftovers as taco or sandwich toppings for the rest of the week. This is also an easy recipe to to change up with other veggies like carrots or onions!


Total Time: 15 Minutes



Ingredients

  • 1 bunch radishes, sliced thinly

  • 1 lemon

  • 1 tbsp olive oil

  • 2 TBSP dill, chopped

  • 1/4 cup grated parmesan (optional)

  • 2 TBSP cilantro, chopped (optional)

  • salt and pepper to taste


Directions

  1. Add your sliced radishes to a medium bowl and squeeze half your lemon juice over the top

  2. Add a big pinch of kosher salt

  3. Massage the radishes with your hands for a couple minutes until slightly soft

  4. Add olive oil, dill and cilantro (if using) and toss well to coat

  5. Add salt and pepper to taste

  6. Top with cheese before serving
