Sauteed Sweet Potato Greens

Last year Nick brought me in bunches of sweet potato greens and told me they were edible. I started researching to figure out how I was going to cook them. We love cooking them this way with the onion and tomato. You can also substitute spinach or chard for this recipe.

Prep Time: 10 minutes | Cook Time: 20 Minutes


  • 3 bunches of sweet potato greens

  • 1 medium onion

  • 1 tomato

  • 3 tablespoons cooking oil


  1. Remove leaves from the stalks and wash, allow to drain

  2. Put cooking oil in a pan over medium heat, add tomatoes, onion, and a pinch of salt.  Stir to make thick.

  3. Stir until the moisture from the tomato is mostly dried out

  4. Add the sweet potatoes and cook, stirring frequently for 5-10 minutes until tender

  5. Ready to serve
