Sauteed Sweet Potato Greens

Last year Nick brought me in bunches of sweet potato greens and told me they were edible. I started researching to figure out how I was going to cook them. We love cooking them this way with the onion and tomato. You can also substitute spinach or chard for this recipe.
Prep Time: 10 minutes | Cook Time: 20 Minutes

Ingredients
3 bunches of sweet potato greens
1 medium onion
1 tomato
3 tablespoons cooking oil
Directions
Remove leaves from the stalks and wash, allow to drain
Put cooking oil in a pan over medium heat, add tomatoes, onion, and a pinch of salt. Stir to make thick.
Stir until the moisture from the tomato is mostly dried out
Add the sweet potatoes and cook, stirring frequently for 5-10 minutes until tender
Ready to serve
