The simplest way to enjoy garlic scapes are to sautee them quickly in a skillet. You can really make any adjustments to this recipe based on what you typically like to sautee your veggies in. For example, you could just sautee the scapes in butter with some salt and pepper.

Ingredients
Handful of garlic scapes, cut into 4 inch pieces
1 tbsp olive oil
1/2 tsp soy sauce (or coconut aminos for a heatlhier option)
1 tsp rice wine vinegar
Directions
Heat a large skillet over medium-high heat. Once hot, add the scapes and allow to cook, tossing occasionally, for about 4 minutes or until they begin to brown.
Reduce the heat to medium and add olive oil. Toss to coat the scapes. Cook for an additional minute.
Add the soy sauce and toss to coat for 30 seconds.
Turn off the heat and add the rice wine vinegar. Toss to combine and allow to rest in the pan for 30 seconds before serving.
