Pasta Salad

A pasta salad hates to see me coming. I was looking for a Ruby Tuesday's pasta salad recipe and it took some time for me to nail down what I was really looking for. This makes a lot, so it's great for a get together or for prepping meals throughout the week. I cannot stop eating this when it is in the refrigerator.


Prep Time: 20 Minutes | Cook Time: 15 Minutes | Chill Time: 1 Hour



Ingredients

  • 16 oz rotini or penne noodles

  • 1 cup mayonnaise

  • ¼ cup buttermilk or sour cream

  • Ranch seasoning packet

  • 1 tsp vinegar

  • ½ tsp pepper

  • 1 cup green peas

  • ½ cup pepper, diced

  • ½ yellow onion, sliced or chopped

  • 8 oz ham, diced (optional)


Directions

  1. Cook pasta according the package directions, rinse with cold water, drain and set aside

  2. In a small mixing bowl add your mayonnaise, buttermilk (or sour cream), ranch seasoning, vinegar, and pepper. Use a spoon or whisk until combined.

  3. In a large bowl, combine your cooked pasta, peas, pepper and onions. Stir to mix

  4. Pour dressing over mixture and stir until all ingredients are combined

  5. This may taste very strongly of mayonnaise, it is best served chilled for at least one hour. This allows the pasta to absorb the mayo. If it still tastes too much of mayo, you can add a tsp or so of vinegar and mix.
