Honey Balsamic Roasted Carrots

We love roasted carrots in our home and I'm always playing around with different combinations. These roasted carrots are sweet but also a little tangy with the balsamic vinegar. Adding goat cheese at the end tops it all off. Not to mention this is a quick recipe with easy ingredients.


Prep Time: 5 minutes | Cook Time: 25 minutes



Ingredients

  • 1lb carrots

  • 1 tbsp avocado oil (or olive oil)

  • 2 Tbsp balsamic vinegar

  • 3 garlic cloves, minced

  • 1 tsp thyme (fresh or dried)

  • 1/4 tsp salt

  • Black pepper, to taste

  • Crumbled goat cheese (optional)


Directions

  1. Preheat your oven to 425 and line baking sheet with parchment paper

  2. Slice ends of your carrots and cut them lengthwise and place in a large boil

  3. In a small bowl, whisk together 1tbsp of balsamic vinegar, 1 tbsp of honey, and your oil. Pour mixture over carrots.

  4. Add your garlic, thyme, salt and pepper and toss until carrots are fully coated

  5. Use a slotted spoon to remove the carrots and spread them on your baking sheet (save your reserved liquid to brush over the carrots later)

  6. Place pan in the oven and roast for 20-25 minutes, during the last 5-10 minutes, brush over your reserved liquid

  7. Once done, mix your remaining balsamic vinegar and hone together and drizzle over your carrots

  8. Toss the carrots and serve with crumbled goat cheese (optional)
