Ginger Carrot Salad

I'm always looking for new ways to use carrots, because we have so many throughout the year. This is an easy recipe that I like to mix up for lunch and we eat on it throughout the week. It's easy to pull out and put on a plate as a side or to snack on during the day.


Prep Time: 5 Minutes




Ingredients

  • 3-5 large carrots

  • 1 tsp sesame oil

  • 1 tbsp coconut aminos (or soy sauce)

  • 2 tbsp rice vinegar

  • 1 tsp minced fresh ginger

  • 1 tsp honey (optional)

  • 2 green onions, chopped

  • 1 tsp sesame seeds


Directions

  1. Use a vegetable peeler to peel each carrot into long thin strips

  2. Place carrots in a bowl and add your sesame oil, coconut aminos, rice vinegar, ginger, and honey

  3. Toss to coat your carrot ribbons

  4. Garnish with green onions and sesame seeds

  5. Serve!
