Garlic-y Kale

This is the perfect quick side that pairs well with fish or chicken. This is a low maintenance recipe that comes together quickly.


Prep Time: 5 Minutes | Cook Time: 15 Minutes


Ingredients

  • Couple of bunches of kale

  • 1/4 cup Extra virgin olive oil

  • Salt

  • 3-4 garlic cloves (or more if you really like your garlic like me), chopped or minced 

  • Red pepper flakes

  • Red wine vinegar

  • Pepper

  • Grated Parmesan Cheese (optional)

  • Breadcrumbs (optional)

 Directions

  1. Remove stems from the kale and chop the leaves coarsely

  2. Wash and drain well

  3. Heat a large sauté pan, add olive oil and enough kale to cover the bottom of the pan.  Cook over high heat while stirring the leaves.  Add more kale as the leaves wilt.

  4. Once all the kale has been added, season with a dash of salt, cover, and reduce the heat to medium.  Stir leaves occasionally, until the leaves are tender (should take about 4-5 minutes).  If your leaves begin to "scorch" you can add a splash of water.

  5. Push the kale to one side of the pan and add a little extra drizzle of olive oil, garlic and a pinch of the red pepper flakes to the bare spot of the pan.  

  6. Once the garlic starts to smell, stir in the kale.

  7. Turn off the heat, add a splash of the vinegar (do this to taste and more can always be added to each individual plate), and season again with salt and pepper if needed. 

  8. Transfer kale to a bowl and add the parmesan cheese, if you're using it, and then top with the breadcrumbs if you're using those!
