Garlic Confit

Garlic confit is a great way to use a lot of garlic and stores for a few weeks in the refrigerator. We use garlic confit as a substitute for minced garlic in recipes. It's also great to spread on toast.
Prep Time: 10 Minutes | Cook Time: 2 hours

Ingredients
6 heads of garlic
3 cups olive oil (or avocado oil)
6 sprigs of thyme (rosemary is also a great add)
Directions
Preheat oven to 250 degrees
Peel your garlic (a quick tip for peeling this much is to break your cloves away and place in a heat proof bowl and submerge into boiling water for 5 minutes. Drain and peel)
Place garlic cloves and thyme into an ovenproof dish and submerge in oil (ensure your garlic is completely submerged so it does not burn). Bake for 2 hours or until the garlic has browned in color.
