Fried Eggplant

Looking for a quick way to use eggplant, give this fried eggplant recipe a try. The fried eggplant allows for some additional versatility with dipping sauces!
Prep Time: 20 Minutes to 1 Hour | Cook Time: 10 Minutes

Ingredients
2-3 eggplants
2 cups all-purpose flour
Dash of salt and pepper
1 tbsp of dried or fresh basil
3 eggs
Splash of milk (1/4 cup)
2 cups of panko breadcrumbs
2 tbsp of oil
Directions
Slice your eggplant in 1/4 inch-1/2 inch thick. Sprinkle salt over and let them sit for 20 minutes up to 1 hour. Pat dry.
Have three bowls prepared:
First bowl - mix flour, salt, pepper, and basil
Second bowl - whisk eggs and milk
Third bowl - panko breadcrumbs
Coat your eggplants in the flour bowl, the egg wash, and then the breadcrumbs
Heat oil over medium heat in a skillet
Place your eggplant in the hot oil, flip after a couple of minutes (once the breadcrumbs are turning golden). Repeat with any remaining eggplant slices.
Serve with a marinara sauce or dip!
