Fried Eggplant

Looking for a quick way to use eggplant, give this fried eggplant recipe a try. The fried eggplant allows for some additional versatility with dipping sauces!

Prep Time: 20 Minutes to 1 Hour | Cook Time: 10 Minutes


  • 2-3 eggplants

  • 2 cups all-purpose flour

  • Dash of salt and pepper

  • 1 tbsp of dried or fresh basil

  • 3 eggs

  • Splash of milk (1/4 cup)

  • 2 cups of panko breadcrumbs

  • 2 tbsp of oil


  1. Slice your eggplant in 1/4 inch-1/2 inch thick.  Sprinkle salt over and let them sit for 20 minutes up to 1 hour.  Pat dry.

  2. Have three bowls prepared:

    1. First bowl - mix flour, salt, pepper, and basil

    2. Second bowl - whisk eggs and milk

    3. Third bowl - panko breadcrumbs

  3. Coat your eggplants in the flour bowl, the egg wash, and then the breadcrumbs

  4. Heat oil over medium heat in a skillet

  5. Place your eggplant in the hot oil, flip after a couple of minutes (once the breadcrumbs are turning golden).  Repeat with any remaining eggplant slices.

  6. Serve with a marinara sauce or dip!
