This recipe was shared with us in our first year of farming and we have used it every year since. The arugula mixes well with the sweet of the preserves and the tangy of the of cheese. This is a fun way to mix up using your arugula.
Prep Time: 5 Minutes | Cook Time: 15 Minutes
Ingredients
1 pizza dough
1/2 cup of fig spread, or fig preserves
Kosher salt
12 ounces fresh mozzarella (I usually substitute the mozzarella with goat cheese)
8 ounces prosciutto, thinly sliced
12 ounces arugula
Shaved parmesan (optional)
Directions
Preheat oven to 350 and arrange oven rack to lowest level
Roll out your pizza dough as thin as it will go and pour on the fig spread
Spread the fig spread thinly all over the surface of the dough and sprinkle lightly with salt
Lay the mozzarella slices over the top of the spread
Bake for 12 to 15 minutes until the crust is golden brown and the cheese is melted and bubbly
Drape the prosciutto slices all over the pizza
Pile your arugula on top
Sprinkle on some parmesan shavings on top (optional)
