Easy Boiled Beets

I love beets. I can eat them any way that they are served. When have a lot of beets coming in, I like to boil a potful and use them throughout the week as snacks or sides with different "toppings" or just plain. Beets are so good for you, so this is an easy way to incorporate them into your weekly nutrition.


Prep Time: 5 Minutes | Cook Time: 40 Minutes

Ingredients

  • Medium sized beets, the larger the beet the longer they will need to boil

  • 2 tbsp apple cider vinegar


Directions

  1. Trim the stems of your beets off, but leave a little stem so not all of your beet juice leaks out

  2. Bring a pot of water to boil with your apple cider vinegar

  3. Once boiling place beets in water and cover

  4. Let boil for 30-40 minutes, or until beets are easily pierced with a fork

  5. Drain beets and let cool, peel


Ideas for using throughout the week:

  1. Save your beetwater for a lemonade or a liquid replacement for soups in your cooking

  2. Top with dill and a sprinkle of sea salt

  3. Top with balsamic vinegar

  4. Top with honey (Carter's favorite)

  5. Serve with goat cheese

  6. Use as a salad topping

  7. Eat plain (my favorite)
