Creamy Parmesan Zucchini

This a kid approved recipe, because who doesn't like melted cheese (even if its on top of zucchini)!


Prep Time: 20 Minutes | Cook Time: 30 Minutes



Ingredients

  • 2 pounds zucchini, cut into ¼ inch rounds

  • Salt, to sprinkle on zucchini

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • ½ cup heavy cream

  • ½ cup sour cream

  • 1 tsp Italian seasoning

  • 1 tsp onion powder

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 ½ cups grated parmesan, divided into 1 cup and a ½ cup

  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 425

  2. Line a baking dish with your zucchini slices and sprinkle salt on each slice.  Lay a paper towel over zucchini and let dry out for at least 15 minutes.

  3. In the meantime, in a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper and 1 cup of parmesan cheese

  4. Melt butter in a skillet, stir in garlic and let cook for about 30 seconds

  5. Add your heavy cream mixture to the skillet; whisk and cook until mixture starts bubble. 

  6. Stir in ½ cup of mozzarella cheese; cook until cheese is melted

  7. Poor in your zucchini and stir to cover all the slices with the mixture.  Try to get your zucchini in a layer in the skillet (some overlap is fine)

  8. Sprinkle the rest of your parmesan and mozzarella on top of zucchini

  9. Place in oven and bake for 18-22 minutes, or until golden brown on top

  10. Remove from oven and let sit for 5 minutes before serving
