These are Carter's favorite pancakes and they're packed full of good stuff, so he can eat as many as he wants. I make a large batch of these and freeze them to reheat in the mornings. We top these with honey when we serve them to him.

Ingredients
2 small very ripe bananas
2 large eggs
1 cup all-purpose flour
1 cup milk
2 cups lightly packed spinach
1 tablespoon chia seeds (or flax seed)
1 ½ tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
Oil for cooking
Directions
Add all of the ingredients to a blender (except the flour)
Blend on high until very well combined, until you no longer notice any flecks of spinach
Stir or pulse in the flour and thoroughly combine (without over-mixing)
Warm a skillet over medium heat and coat with oil or butter.
Pour small rounds of batter onto the hot surface (the batter should spread fairly thinly) and let cook until bubbles form on the surface (about 3-4 minutes)
Flip and cook an additional 3-4 minutes
Continue with the rest of the batter
