Broccoli Fritters

This is another recipe that I started making when Carter was starting to eat solids and the whole family enjoys them. We like to serve these with ranch, tzatziki sauce or marinara sauce.

Prep Time: 10 Minutes | Cook Time: 10 Minutes


  • 3 cups broccoli florets

  • 2 eggs

  • ½ cup shredded mozzarella cheese

  • ¼ cup breadcrumbs (or all purpose flour)

  • 1 tsp cumin

  • ½ tsp dried oregano

  • ¼ tsp salt

  • 2 tbsp olive oil


  1. Add the broccoli to a heat-safe bowl, cover with boiled water and let sit for 5 minutes.  Drain and pat dry.

  2. Add the broccoli and the rest of the ingredients, except the olive oil, to your food processor.  Grind on high until a batter forms, scraping down the sides as needed

  3. Add the oil to a wide skillet over medium heat.  When warm, add ¼ cup of batter at a time and press down.

  4. Cook for 2-3 minutes per side, flipping halfway through.
