This is another recipe that I started making when Carter was starting to eat solids and the whole family enjoys them. We like to serve these with ranch, tzatziki sauce or marinara sauce.

Ingredients
3 cups broccoli florets
2 eggs
½ cup shredded mozzarella cheese
¼ cup breadcrumbs (or all purpose flour)
1 tsp cumin
½ tsp dried oregano
¼ tsp salt
2 tbsp olive oil
Directions
Add the broccoli to a heat-safe bowl, cover with boiled water and let sit for 5 minutes. Drain and pat dry.
Add the broccoli and the rest of the ingredients, except the olive oil, to your food processor. Grind on high until a batter forms, scraping down the sides as needed
Add the oil to a wide skillet over medium heat. When warm, add ¼ cup of batter at a time and press down.
Cook for 2-3 minutes per side, flipping halfway through.
