Broccoli and Chicken Hand Pies

"Use your favorite crust recipe. Double it, put half in the refrigerator so you can make quiche too! We use a recipe that is enough for a top and bottom crust. This generally makes 6 hand pies. "

Ingredients
1 Pie crust recipe
3 cups of chopped precooked chicken. We suggest using a whole chicken. This makes for cooking once eating 2-3 meals from it!
1 Medium head of broccoli, lightly steamed and roughly chopped.
1/2 medium onion, finely chopped
4 Cloves of garlic, minced
2 tbsp cooking fat of choice
Salt and pepper to taste
3 cups of shredded cheese of your choice.
Directions
Preheat the oven to 375.
In a small pan saute onion and garlic with salt and pepper in cooking fat until fragrant and just softened, then set aside.
Divide prepared and chilled pie crust into 6 equal pieces.
On a floured surface, roll out each portion into an evenly shaped circle or square. it doesn't have to be perfect. As you roll each portion out, place on an ungreased cookie sheet. After you have all portions rolled out, place even amounts of broccoli, chicken, cheese, and onion mixture onto one half of each crust.
Carefully fold over the empty side of the crust, so that the edges meet. Use a fork to press and seal the edges.
Once the edges are sealed, place the cookie sheet in the preheated oven and bake for 12-15 in or until golden on top. Let set for 5 min and enjoy!
