Basic Cheesy Squash Roast

This is a simple, low ingredient recipe to throw together as a side. Plus with the cheese on top, it's kid tested and approved!

Prep Time: 5 Minutes | Cook Time: 35 Minutes


  • 3 medium squash, sliced (or any squash/zucchini).

  • 1 cup freshly shredded parmesan

  • 1 tablespoon olive oil

  • 1 pinch salt and pepper


  1. Preheat your oven to 400F

  2. Place the squash into a steamer basket over water.  Steam for 10 minutes.

  3. Transfer the squash to a roasting dish.  The squash should be fairly tight in the dish.

  4. Season the squash with salt, pepper and olive oil.

  5. Generously apply the shredded parmesan to the top of the squash

  6. Roast, uncovered, for 25 minutes

  7. Serve warm
