Spiced Carrots w. Whipped Feta

These spiced carrots are a fun way to mix up your carrot recipes and the whipped feta can be used for raw vegetable dip throughout the week. These were also Carter approved carrots and super easy to make.


Prep Time: 15 Minutes | Cook Time: 25 Minutes


Spiced Carrot Ingredients

  • 1lb of carrots, halved lengthwise and cut to desired size

  • 1 tsp ground cumin

  • 1 tsp salt

  • 1/2 tsp ground tumeric

  • 1/4 tsp chili flakes, optional

  • 1 tsp minced ginger (or 1/4 tsp ground ginger)

  • 1/2 tsp ground cinnamon

  • 2 tbsp extra-virgin olive oil

Whipped Feta

  • 4 ounces feta cheese (about 3/4 cup)

  • 1/2 cup whole-milk greek yogurt (or sour cream)

  • 1 tbsp EVOO

  • 1 garlic clove, roughly chopped

  • 1/4 tsp salt

  • 1/8 tsp black pepper


Directions

  1. Preheat over to 425 and line backing sheet with parchment paper

  2. In a large bowl, combine your cumin, salt, tumeric, chile flakes, ginger, cinnamon and olive oil

  3. Add the carrots to your spice mixture and stir evenly until coated

  4. Arrange your carrots on the baking sheet

  5. Bake for 20 to 25 minutes, until carrots are slightly crisp and soft

  6. While carrots are baking, make your whip

  7. In a small food processor, combine all of your whip ingredients and blend until fluffy

  8. You can either spread the whip on a plate and top with carrots to make a fancy plate or your can serve the whip as a dip on the side
